This Pina Colada recipe is the perfect patio or poolside treat in June, and it's easy on the calories!
A typical pina colada is loaded with sugar because of the cream of coconut and pineapple juice...this recipe minimizes the sugar by replacing canned pineapple juice with fresh pineapple, and reducing the amount of cream of coconut. Also, by using frozen pineapple, you can cut back on the ice and create a thicker, richer cocktail. Of course, you can enjoy a virgin version of the drinkie by omitting the rum. Cheers!
Ingredients:
1 shot light rum
1 Tbsp cream of coconut
1/2 Cup pineapple chunks, frozen
2 Tbsp pineapple juice
1/4 Cup ice
Preparation: (So easy!)
Put all ingredients in a blender and blend until slushy or super smooth...whatever your tropical-vibing self desires! Voila!
