Try this tangy, peppery treat with your favorite tortilla chips, grilled or broiled tuna, sautéed scallops, chicken, turkey, or plain tortillas!
Ingredients:
1 small, fresh, juicy-ripe pineapple, diced (4 cups)
1 large jalapeno pepper, minced (1/4 cup)
1 scallion, including green top, minced (1/4 cup)
3 Tbsp. chopped, fresh cilantro
1 Tbsp. corn or vegetable oil
Juice of 1 large lime (3 Tbsp)
Salt and freshly ground black pepper
Directions:
Cut the top and skin off pineapple and remove the core. Finely dice the fruit and place it in a glass bowl. Remove the stem and seeds from jalapeno and mince the flesh, then add it to the pineapple. Add scallions, cilantro, oil and lime juice. Toss to mix completely. Season with salt (if desired) and fresh pepper. Chill at least 1 hour before serving to allow flavors to meld.
